Best Ever Pumpkin Bread
I am a HUGE fan of pumpkin. One of the things I loved most about fall growing up was my mom's pumpkin bread. She made it multiple times every year and none of us could ever get enough. I specifically remember coming home from the first day of school one year and I smelled its magnificent aroma as soon as I opened that door.
I've tried many different pumpkin breads before and none have ever really come close to my mom's recipe. I've also tried this particular recipe with different brands of pumpkin and let me just say that they were all a total bust. Libby's is by far the best. Another great thing about this recipe is that it's totally vegan, too!
So without further ado, here's the recipe!
Best Ever Pumpkin Bread
Ingredients:
- 4 cups (or 1 large can) of Libby's 100% Pure Pumpkin
- 4 cups sugar
- 1 cup oil
- 5 cups flour
- 1 1/2 tsp. salt
- 4 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1 tsp. allspice
Directions:
- In a large bowl, mash pumpkin. Mix in sugar and oil until well blended.
- Blend in flour, salt, soda, cinnamon and allspice until fully mixed.
- Pour into two 9" by 4", or three 8" by 3" greased loaf pans.
- Bake at 350 degrees for 1 hour, or until an inserted toothpick comes out clean.
My husband is such a great helper with strong arms to help me mix!
